Happy Thanksgiving 2022! - making a vegan feast



To our Family, Friends, and Community,


We would like to wish you a very Happy Thanksgiving!


Taking a break from talking about the benefits of Whole Naturals Castile Soap this week (but of course we need it for dishes duty) I would like to take the liberty of sharing our Thanksgiving menu, and some of our family's favorite recipes! (if you want the ones I didn't include, drop me a line!)


When our family chose a more sustainable, and vegan lifestyle, we knew that we would need to be creative about ensuring we enjoyed traditional foods, but kept to a plant-based menu. Colorful, tasty and easy to prepare were our priorities. Over the past few years, we've tweaked the recipes, but we make a Thanksgiving feast that flavorful!


Appetizers:

Creamy spinach artichoke dip

Walnut Sage Stuffed Mushrooms

Simple Orange Soup


Super Simple Orange Soup

  • 2 large sweet potatoes

  • 1 large butternut squash

  • 8 oz fresh pumpkin

  • 4 carrots

  • 2 onions

  • 1 tsp ginger

  • 8 cups water

  • Salt to taste (I used 2 tbsp. kosher salt)

  • Optional: ground cloves, nutmeg, cinnamon

Here's How:

  1. Cut the vegetables into chunks.

  2. Place all ingredients in a strong-bottomed pot.

  3. Bring to a boil.

  4. Reduce heat and simmer until vegetables are tender (approximately 1 hour).

  5. Remove cover of pot, and allow vegetables to cool for at least 1 hour.

  6. Blend until smooth.


Main Course:

Roasted Acorn Squash Salad, Stuffing, Mushroom Wellington & Crispy Roasted Potatoes


Vegan Stuffing

  • 1 large loaf whole-grain bread

  • 3 Tbsp olive oil

  • 1/2 cup white onions

  • 2 cloves garlic

  • 3/4 cup celery

  • Salt & pepper

  • 3 – 3 1/2 cups vegetable broth

Here's how:

  1. Cube the whole-grain bread and leave out to dry (you can speed up the process by putting it a 180 degree oven for 2 hours)

  2. Sautee onions, garlic, and celery

  3. Add vegetable broth to & celery mix to the bread

  4. Bake at 350 for about 40 minutes!


Dessert:

Pumpkin Pie, Cinnamon Baked Apples & Non-Dairy Vanilla Ice Cream


Cinnamon Baked Apples


Here's how:

  • Sliced and peel your favorite crispy apples & place in a casserole dish

  • Add brown sugar for a warm and nutty flavor, and beautiful color

  • Tons of cinnamon!! it's a must!

  • Vanilla

  • Optional: Lemon juice (keeps the apples from turning brown)

Bake covered for 20 minutes at 350 - uncover for the last 5 minutes
